MAIDA DIAMOND CUTS/ DIAMOND BISCUITS

                             
        Maida diamond cuts are deep fried diamond cuts made of white flour, butter and sugar mixture. It is an easy to make sweet that comes under the 'not so sweet' category!! When you have mild sweet cravings or simply no reasons to eat sweets, these would surely help you. This can be had for snacks along with tea.

MAIDA DIAMOND CUTS/MAIDA DIAMOND BISCUITS RECIPE


Cuisine - South Indian
Category - Snack
Yields - 4 servings

INGREDIENTS
Maida/ All purpose flour - 1 cup
Powdered sugar/ castor sugar- 1/4 cup
Butter (or ghee) - 1 teaspoon
Cardamom powder (optional) - a generous pinch
Salt - a pinch
Coconut milk (optional) - 1 tablespoon
Oil - for deep frying

METHOD
1. Mix maida, castor sugar, butter (softened), cardamom powder and salt with coconut milk (if using) to a smooth dough. Add water if necessary.




2. Divide the dough into 4 equal parts. Let it sit for 10 to 15 minutes.

3. Roll them to circular discs. (don't bother about the shape!). Make it thin. Dust flour as and when needed.


4. With a knife cut vertical strips in a diagonal fashion. Repeat it with the other side to make diamond shaped cuts.


5. Heat oil in a wok for deep frying. Add a pinch of the dough and if it comes up steadily, the oil is ready.

6. Deep fry these diamond cuts. When slightly golden, take them off with a slotted spoon.


7. Drain the excess oil in a kitchen towel. Serve with tea!!


8. Store in air tight containers.



TIPS
1. These cuts can be finally coated in castor sugar too.
2. Baking soda can also be added to the dough. This helps in puffing up.
