I've used whole grain rotini for this recipe which can be substituted with any short pasta (shells, farfalle, fusilli or the classic macaroni).
INDIAN STYLE ROTINI PASTA RECIPE

INGREDIENTS
Whole grain rotini pasta - 1 cup
Onion (small sized, chopped) - 1 no.
Tomato (medium sized, chopped) - 1/2 no.
Refined oil - 1 tablespoon
Mustard - 1/2 teaspoon
Green chilly (slit lengthwise) - 1 no.
Curry leaves - a few
Sambhar powder - 1.5 teaspoon (adjust as per taste, this would be of medium heat)
Salt - as required
Water - as required
METHOD
1. Cook the pasta as per package instructions or until tender, yet firm. Drain the pasta and reserve about 3 tablespoons of the cooked water. Keep aside.
2. Heat oil in a saucepan and temper with mustard and let it sputter. Add in the chopped onions, slit green chilly and curry leaves. Saute till the onions are translucent.
3. Lower the flame and add chopped tomatoes, sambhar powder and salt. Keep the flame in medium now and cook till the raw smell of sambhar powder leaves.
4. Now add the cooked rotini along with the reserved water. In high flame, cook until the water evaporates. Serve hot.
TIPS
1. Add few veggies to make it more wholesome.
2. Turmeric powder can also be added for a brighter colored pasta :)
