DRY FRUITS LADDU

Dry fruits laddu
                               Its been months together since I have blogged.. So started my space again with a nutritious sweet that would make anybody's day. Though the sweet is sugar free, diabetics are advised to ask their physicians before giving this sweet a thought. I would strongly recommend this for pregnant ladies and kids, as it is loaded with nutrients. These laddus would help you to increase your hemoglobin levels too. Make them and pop one whenever you open the refrigerator!

DRY FRUITS LADDU RECIPE
Cuisine - Indian
Type - Sweet
Preparation time - 15 to 20 minutes
Cooking time - about 15 minutes
Yields - about 6 to 7 servings.
 
INGREDIENTS
Pitted dates - 2 Cups
Dried figs - about 20
Golden raisins - 1/4 cup
Almonds - 3 tablespoons
Walnuts - 3 tablespoons
Brazil nut (chopped) - about 3
Cashew nuts - 3 tablespoons
Pistachios - 3 tablespoons
Sesame seeds (dry roasted) - for garnishing (optional, I din use)
Clarified butter (Ghee) - 1/2 teaspoon
 
METHOD
1. Chop pitted dates and dried figs to pieces.
2. Dry roast all the nuts (almonds, walnuts, brazil nut, cashewnuts, pistachios) separately in a saucepan till slight brown. Each nut takes different time to get roasted. Keep aside. Chop the Brazil nut prior to roasting so that the grinding is easier and uniform.
3. Run dates, figs and golden raisins in a dry mixer grinder. They should become sticky and gather as a mass in the mixer grinder. Place them over a big plate.
4. Add the roasted nuts in the mixer grinder and run it a few times. Let them be coarse to give you crunchy bites in the laddu. Put them over the grounded dry fruits.
5. Grease your hand with clarified butter. Knead them in such a way that the dry fruits and nuts are incorporated well. Shape small balls to make these gorgeous laddus. Roll them over roasted sesame seeds if desired.
6. Feast on these exotic laddus!! Refrigerate left overs and consume within 10 to 12 days. Don't worry too much about that, they won't last more than a couple of days!!
 
TIPS
1. There is no hard and fast rule to make these laddus. Nuts and dry fruits can be added as desired. Just keep in mind that the only thing that binds the laddus are the dry fruits so make sure it is more than the nuts.
2. The nuts can be grounded as per one's taste. It can be grounded to a smooth powder as well.
