WHOLE WHEAT CRESPELLE WITH APPLE-CINNAMON FILLING

That definitely sounds like Italian? isn't it? I was actually hunting for an authentic Italian breakfast recipes and I bumped into this recipe . Now it has become one of our most sought after breakfast. Well.. Crespelle is just the Italian name (or should I say 'fancy name') for pancakes. I loved the recipe as it had whole wheat flour instead of plain flour. The filling is just apple, sugar and ground cinnamon cooked together. I once tried it with pear also and it was a bit tart as it was supposed to be but it was still a hit.

WHOLE WHEAT CRESPELLE WITH APPLE -CINNAMON FILLING RECIPE
Cuisine - Italian

Preparation time - 10 minutes, standing time - 30 minutes
Cooking time - about 2 minutes for each crespelle
Yields - 10 to 12 crespelles
INGREDIENTS
For crepes/ crespelles
Whole wheat flour - 1 cup
Eggs (slightly beaten) - 3 nos
Milk - 1 cup
Butter (melted) - 2 tablespoon
Salt - to taste
For the filling
Apples (large) - 3 nos
Sugar - 3 tablespoons
Ground cinnamon - 1 teaspoon (or as per taste)
Recipe
For the Crepes/ Crespelles
1. In a mixing bowl, add all the ingredients listed under 'For crepes/ crespelles' and whisk them together until no lumps.
2. Refrigerate for atleast half an hour.
3. Heat a pan, rub it with a tissue soaked in oil. When heated pour a ladle full of batter and make crepes either by rotating the skillet or with the help of a ladle. When it is just cooked (we don't want it crisp), flip it with a dosa flipper and let it cook on the other side. When done, stack over and start to prepare the filling.
 For the filling
1. Peel, core and chop the apples into pieces.
2. In a skillet, heat apples, sugar and cinnamon together.
3. Let the apples and sugar cook for 15 to 20 minutes. Turn off the stove and let it cool.
4. Stuff the crespelles. Roll them neatly. Serve with castor sugar dusted over or just drizzle some honey over it.

NOTES
1. When you don't really want a sweet filling, try these crespelle with our own gunpowder for a change.
2. Make the filling with berries or pear for a fun filled twist.
3. Play over the ingredients for customizing the filling as per your taste.
