PARANGI PINJI ADAI/ YELLOW PUMPKIN INDIAN PANCAKE


  Parangi pinji adai is a pancake prepared from rice, lentils and yellow pumpkin. It is famous in the Trichy region of Tamil nadu. This would serve as a yummy breakfast. Is your kid a picky eater? then, this is just for you...

YELLOW PUMPKIN INDIAN PANCAKE/ PARANGI PINJI ADAI RECIPE

Makes - 10 to 12 adais

INGREDIENTS
Idli rice or Regular rice - 1 cup
Chana dal/ Kalla paruppu - 1/3 cup
Toor dal/ Thuvaram paruppu - 3 tablespoons
Moong dal/ Paasi paruppu - 3 tablespoons
Red dry chillies/ Vara milagai - 6 to 7 nos (or as required)
Garlic - 6 to 7 cloves
Yellow tender pumpkin (finely minced) - 150 g
Onion (finely chopped) - 3 nos 
Coconut (scrapped) - 3 tablespoons 
Curry leaves (finely chopped) - 2 to 3 sprigs 
Coriander leaves/ Cilantro (finely chopped) - 2 to 3 sprigs
Oil - as required
salt - as required 

METHOD
1. Soak rice and the lentils in separate vessels for an hour.
2. Grind rice, red chillies and garlic cloves until they are grounded to a paste.
3. Now grind the soaked chana dal, toor dal and moong dal with the rice mixture to a coarse paste. Add enough water for grinding.
4. Transfer it to a vessel and add salt, scrapped coconut (or coconut bits), minced pumpkin, chopped onion, curry leaves and coriander leaves. Add in more water if necessary. It should be of pouring consistency with normal thickness.
5. Now, Heat a pan. Grease oil and add a ladleful of batter and move in circular motion to form thick adai. Adai is good when it is thick. Pour over some oil. 
6. Cook covered so that the top portion is also cooked in the steam. Flip it to the other side and cook uncovered till crisp. 
7. Serve hot with coconut chutney. 

TIPS
1. Coconut can be added in minute bits. This would relish your taste buds.
2. Choose pumpkin that is tender. Tender pumpkin gives the actual taste.
3. Addition of garlic is optional but the flavor it gives is sure to linger your taste buds.
4. Pumpkin can be substituted with bottle gourd, ash gourd or drumstick leaves.
